These turkey burgers are loosely based on the method devised by Kenji Lopez-Alt at Serious Eats. Don’t be turned off by the anchovy, you won’t taste it at all in the final product. As their article states, they don’t suck. You won’t mistake them for a beef burger but the flavor is good and they’re a lot lighter.
- 1 lb ground turkey
- 1 egg
- ~3 anchovy fillets
- 1T soy sauce
- Grated parmesean
- Olive Oil
Mash anchovy fillets in soy sauce until smooth. Add ground turkey and egg and use hand to roughly combine. Grate a bit of parmesan over the mixture (it’s hard to even eyeball a measurement so I didn’t try. Add bread crumbs until consistency seems reasonable; we had about 1/3 of a stale baguette and I ground and used that. Add a little oil with bread crumbs.
Divide into 4 patties and shape. Heat a skillet with a little olive oil. Add patties and cook flipping midway (about 4-5 minutes per side).
